I stumbled upon this recipe by simply combing two nutrient powerhouses – açaí + chia seeds. Delicious as is, you can snack on this pudding alone or add it to your next smoothie. Arlo recommends trying it in his favorite meal, Tastes Like Rio.
Açaí Chia Pudding Recipe
Combine in pint size Ball Jar…
- 1/3 cup Chia Seed
- Fill the rest of the jar with açaí juice
Thoroughly stir the chia seeds and let them soak overnight in the fridge.
Enjoy within a week’s time.
Note: Please make sure that enough açaí juice is added to your mixture. The finished product should have a runny, goopy consistency. Not a thick, gelatinous texture. This is more so important if you plan on feeding it to a baby, because chia seeds that are not properly soaked could pose as a choking hazard.
Top Tip: I snag both of these items in bulk at Costco.
Why I love it: This pudding is packed with antioxidants, protein, Omega-3s, and fiber. It makes for a great addition to any meal!
