Savory Saturday: Delicious + Simple Veggie Sides

I may not have oodles of time to make some elaborate dish that is deemed Instagram worthy…but these simple dishes are nevertheless delicious and nutritious.

Diced Sweet Potatoes with Mozzarella

Ingredients:

  • 1 sweet potato
  • olive oil [just enough for a drizzle]
  • salt
  • pepper
  • fresh mozzarella [cut into cubes]

Sliced Zucchini with Parmesan

Ingredients:

  • 1 zucchini
  • olive oil [just enough for a drizzle]
  • salt
  • pepper
  • grated parmesan
  • cayenne pepper [optional]

 

Instructions:

Step 1: Preheat oven to 425

Step 2: Dice your sweet potato and slice your zucchini

Step 3: Add a few dashes of olive oil to both the sweet potato and zucchini. Grind salt and pepper over both dishes as well [enough to lightly cover the entire dish].

Step 4: Mix around the veggies with your hands, in attempt to evenly coat everything.

Step 5: Bake sweet potato dish for 30 min.

Step 6: While your sweet potatoes are baking, sprinkle parmesan cheese over zucchini. I have a heavy hand with the cheese, but a light sprinkle will do just fine. Set zucchini aside. Also, chop up chunks of mozzarella in preparation for the sweet potatoes.

Note: If you are looking to spice things up a bit, mixing a pinch of cayenne pepper powder into your parmesan adds a flavorful boost to the dish.

Step 7: After 30 min, take your sweet potatoes out of the oven and scatter mozzarella cubes on top. Broil for 5 min. And voila!

Note: To avoid the potatoes soaking up that watery/oily bit at the bottom of the dish, I try to remove the potatoes ASAP once they are done baking.

Step 8: As I set the sweet potatoes to broil, I throw in the zucchini along with them. I broil the zucchini for 10 min and they are all set!
